30 Days Vegan Meal Plan (No Oils/ Fats & Processed Foods) INTRO.

I've decided to take on a 30 day challenge, change my eating habits, in hopes for certain results.

("Vegan" Meal Plan Excluding Fats/ Processed Foods)

Background on  my previous eating habits:  I grew up in a household where steaming was the preferred method.  No microwave, nor use of the oven!!!!  Junk food wasn't allowed much and McDonald's was the weekend splurge.  In my adult years, I began to prefer eating more vegetables than in my younger years.  Since 2009, I had discovered the raw food and juicing movement which really intrigued me.  The more I learned about how our food production came about, how the system runs on sickness and not on health, really opened my eyes.  That moment led me on a journey of personal discovery and deep sense of purpose.

When I began making green smoothies, just the mere act of nourishing my body played a significant role on my mood.  I kept researching more information and watched the "liferegenerator" on Youtube.  I was very inspired and I believe it was just a natural progression toward this lifestyle, or it's philosophy: Fruits and Veggies are the best fuel for your body, simple as that.  My body, mind, and soul all agreed.

I still ate junk food from time to time, binging to be exact, but I still believed in this lifestyle.  So I fluctuated on and off, uncommitted for many reasons.

Food wasn't just nourishment, but comfort, and a filler for what lacked in my life.  Doesn't that apply to you too?

The book, "Nourishing Wisdom" is a great read and explains this phenomena in great detail.

Thus, here I am finding inspiration and most of all squashing the fear that prevented this moment from coming sooner.  I am ready now.  Testing myself, to practice being an example, and using my experience to learn and maybe inspire another.

Thus my Youtube Videos have begun.  Shoddy videos, haha, but quick snippets until I find my creative flow.  I thought it would be extremely awkward to film myself, but after 20+ tries, you realize, "WHY AM I STRESSING OUT TRYING TO BE A PERFECTIONIST!?"  The point of these videos are to document this experience through my point of view, while learning editing and whatnot.  Inspiration and creative progression will come naturally.

Overall, what results am I looking for?

- Increased Energy Level
-Difference in Mood
-Smoother/ Less Dry Skin
-Greater Performance Working Out
-Better Quality of Sleep

Hopefully this act of self-love will cause a chain reaction to many more loving acts!!
